Unico Zelo 'Sea Foam' Pét-Nat is a salty, refreshing natural sparkler from South Australia, crafted predominantly from Fiano and inspired by the coast. Fermented in bottle with native yeasts, unfined and unfiltered, it delivers a crisp, slightly cloudy fizz bursting with character. On the palate, think nashi pear, green apple, white nectarine, and a delicate floral lift of frangipani, all wrapped in bright acidity and a gentle saline finish. With its low alcohol, bone-dry profile, and breezy, grassy freshness, Sea Foam is as close to a pure distillation of springtime as you’ll find - perfect for sunny afternoons and seafood pairings.
"The husband and wife team of Brendan and Laura Carter are the minds behind this relatively new wine label that is based in the Adelaide Hills but draws its fruit from as far away as the Riverland and Clare Valley. Fiano and Nero d'Avola come from the Riverland, where the Carters say they can achieve economically viable crops from those varieties without much (if any) irrigation. The Piemontese varieties come from the Polish Hill River section of Clare Valley, the Nebbiolo from a vineyard originally planted by Penfolds in 1990. These are fun, engaging wines meant to be consumed in their youth, with the focus largely on fruit quality.
