Quartz tends to erode at a different pace, leaving quartz stones on the surface that reflect light but do not reflect heat. This leads to optimal ripening, with soft cherry and blackberry flavors followed by lightly toasted spice. There is a ferrous note to the wine followed by fine, satiny tannins that have a certain lusciousness about them. The wine sees 80% whole-cluster fruit and is fermented in upright wooden vats. In the past, much of the crop was sold to negociants, but now all of it is estate bottled. The Bonnefonds farm just under 14 acres in Cote Rotie and 2.5 in Condrieu. Production is approximately 12,000-15,000 bottles of the Cote Rozier, 3,000-4,000 bottles of Les Rochains, and 2,000 cases of the regular cuvee. Everything is destemmed, and the wines are made with both pump-overs and punch-downs. The single vineyard wines see as much as 85-90% new French oak, and the classic Cote Roties see 25-30% new wood. There is no filtration. Roughly half of Gallet’s organically-tended vineyards are now being plowed by horse; and the couple – with in her case an equestrian background – are now understudying this art with one of the few remaining local practitioners (active in that capacity since age 14) and planning to invest in two plow-horses of their own, once there is room to house them in a new winery that is on the drawing board, to be built on the road from Latour-de-France to Montner. (The Gallets’ cellar facilities in the center of Montner are strained to accommodate their crush and barrels.) Gallet believes that plowing is critical to getting the most out of the fine-grained – as she aptly puts it, “couscous-like” – microbial-rich soils she has worked so hard for the last eight years to build in sites most of which were heavily treated with pesticides and herbicides before she acquired them.
